
Yes, I just realized that I used another picture of this lettuce in my clean eating post. This is the type of lettuce that we are growing right now, which is an heirloom baby lettuce mix. The leaves are so fresh and tender that you barely need dressing, just a little lemon juice and a tiny drizzle of good olive oil is all you need. Lettuce is one of those vegetables that is so easy to grow and a fun way to encourage kids to eat salad. If they get to watch it grow and pick it themselves, they are more inclined to try it. We have fallen behind on our vegetable garden this year. I had tomatoes and basil that were thriving and taking up so much space that we have not planted as many winter vegetables. I would love to hear from any of you experienced vegetable growers out there. I could use some tips.
Lettuce is the most frequently eaten vegetable in the United States. Unfortunately, the majority of the consumption comes in the form of iceberg lettuce on a fast food burger. Pretty incredible to think that the sad little piece of iceberg may be the only vegetable that some people get all week. I know this does not apply to my readers since you are a bunch of educated, vegetable loving folks, but it is astounding that some children are being raised and don’t know what a vegetable is. Lettuce contains vitamin A, fiber and folic acid. It is very low in calories but provides bulk to your diet, so load up your plate. The darker the leaves, the more nutritious the lettuce is. Don’t get too caught up on the color of the lettuce, just try to eat lots of fresh green leaves every day. Your body will thank you for it.
